I ran across a recipe similar to this on pinterest and my wheels went to turning. Today I cleaned my house and still had plenty of time to try this delicious cake before running into town. I take photos of my creations in hopes that it will be worth blogging. Well this one made it! It is moist with an extra creamy frosting. Love it
So here it is I hope you enjoy!
Easiest Gluten Free Banana Cake Ever
Ingredients:
1 box Betty Crocker Yellow Cake Mix
2 eggs
1/2 cup evaporated milk
2 ripe bananas, mashed
1 stick butter or margarine, softened
1 Box vanilla pudding mix
Directions:
Mix all ingredients in a large bowl with mixer. Spray a 9 x 13 inch cake pan. Bake in preheated 375 degree oven for 30 to 35 minutes until done in middle. Let cool before frosting.
Frosting for Banana Cake:
1/2 cup butter or margarine or 1 stick, softened
1 ripe banana, peeled and mashed
1 (8 ounce) cream cheese, softened
3 to 3 1/2 cups confectionery sugar
1 tsp pure vanilla flavoring
Directions:
Mix all ingredients in large bowl with mixer until of spreading consistency.. Spread on cooled cake.
Keep this cake in the refrigerator.

My Favorite Meatloaf
Hey friends I am still cooking although nothing new lately because we have been craving the old. There's nothing wrong with that is there? Anyway here is an old recipe of mine that I have worked on every time I make it and I think it has finally reached perfection.
You will love the sweet crunchy goodness of my favorite meatloaf by far!
My Favorite Meatloaf
Ingredients:
1 pound ground beef or venison
2 eggs
1 cup corn flakes; crushed
2 Tablespoons parsley; minced
1/2 c. ketchup
1/3 c. brown sugar; packed
1 Tbs. Dijon Mustard
2 shakes of Gluten-free honey mustard B'Que sauce
1 Tbs. Worcestershire sauce
1/2 cup grated Parmesan cheese
salt and pepper to taste
Instructions:
Preheat oven to 350 degrees. Prepare last eight ingredients and set aside. Combine the rest of the ingredients with hands until evenly mixed. Work in half of the sauce mixture. Shape the meatloaf and place it on a grill pan. Pour 3/4 of the remaining sauce on top and bake for 45 minutes to an hour then add remaining sauce on meatloaf and heat until hot.

Sharing Easter
Easter is over but I'm still spending a lot of time in Starkvegas. My daughter called me Monday morning to tell me the grand-babies were both sick. She had a doctors appointment on Tuesday and I was to go baby sit for her so we decided that I would go early and help out with the babies. It's a good thing I did my Punkin has strep and has been really sick, we took her to the doctor today and they gave her a shot so she should be feeling better soon!
Here are a few shots I wanted to share from Easter. We had a great time with my Dad and our youngest children on Saturday and then after church on Sunday we road over to visit with Steve's family. We had not seen some of them in a while so that was fun too! I didn't get many photos there because I was too busy visiting.
I haven't seen any Easter pictures of Mary and her family or I would be sure to share them too.
So when the babies are better and I can return home maybe I can start cooking again and share some more great recipes, I have a few in mind now.

Happy Easter Y'all!
I'm getting ready to go celebrate Easter with our youngest children the only wish I have at this point is that we all could be together as a family but since we can't I'll make the best of it.
I have made simple chocolate cupcakes for me and my Punkin to decorate. Now the problem is Punkin will probably apply the frosting and then lick some of it off, its a good thing only Dad, Mom and Pepaw will be eating them! This is how I make memories with the grand-children. I bought my ingredients to do this with my older grandchildren while they were in town but I wasn't home due to a stomach procedure and didn't have the chance to do it so now Punkin and I will decorate them.
Here are the cupcakes before taking them to Starkvegas and if I remember I'll take a photo of the finished product.
For my gluten free dessert I made my Chocolate Chip Cheese Bars, I haven't had them in a while and everyone loves them and they are super easy so it was a no brainer!
I changed my recipe up a little, I added a pudding mix to my cookie mix and a teaspoon of vanilla to my cream cheese mixture. I also used one forth of the mix for the bottom crust and crumbled the rest over the top. It make a crunchier topping with a rich creamy middle and I think I like it a lot better.
