It is time for vacation bible school once again and our VBS means food and fun along with a spiritual emphasis. This morning I was thinking about gluten free food, we have great cooks in our church but none of them cook gluten free. So during the time others are enjoying their breakfast casseroles and coffee cakes what would I eat? Last year I took bars and just had a drink and a bar but this year I decided to do something a little different. I have made my Sour Cream Blueberry Muffins and I will take one of them each day and maybe they'll have some fruit on hand that I can eat with it. You would think that I would get tired of a blueberry muffin everyday but not these, they are moist and wonderful and will be just right for the occasion. Make some for yourself and see what I'm talking about!
Sour Cream Blueberry Muffins
Servings: 12
Ingredients:
2 cups biscuit mix; I use Pamela's baking and pancake mix
¾ cup plus 2TBLS sugar; divided
2 eggs
1 cup 8-oz. sour cream
1 cup fresh or frozen blueberries
enough whipping cream or milk to moisten
Instructions:
In a bowl, combine the baking mix and 3/4 cup sugar. In another bowl, combine the eggs and sour cream; stir into dry ingredients just until combined. Fold in the blueberries. Fill greased muffin cups three-fourths full. Sprinkle with the remaining sugar.
Bake at 375 degrees for 20-25 minutes or until a toothpick comes out clean. Cool for 5-minuts before removing from pan to a wire rack.

Rudis Fiesta Tortilla Review
I recently received a note asking my to try Rudis new tortillas and
post a review. Man was I excited because I have never tried a Rudis
product that I didn't absolutely love.
This is what I received. They always send such a lovely package!
I chose to use the Fiesta tortillas first and when I took my first bite my mouth did a dance. They are wonderful, they are soft and have a great texture just like a regular flour tortilla but these have just a hint of jalapeno and it with the combination of other spices make them just perfect.
I made one mistake I bragged on them to my husband and then he insisted that I share but I mad it clear that he could only have one. He loved them too so now I'm tempted to hide them.
I look forward to trying the others as a matter of fact I'm going to my daughters and I think I'll take some with me but I won't brag to my family this time.

Low Calorie Gluten Free Baked Eggplant Parmesan
I was recently talking to my Dad and he mentioned the eggplant in his garden. Just talking about it made me want eggplant so the next time I went to town I picked up one. I remember my Mom cooking eggplant when I was growing up and she went to a lot of trouble so I've never been a big fan of eggplant. Not that I didn't like it, I really did, but I thought in order to make it taste good you had to go through the same process my Mom did so to me it wasn't worth the trouble.
My new experience proved that you can make a great eggplant dish with no trouble at all! So the next time you have an eggplant here is a easy low calorie baked eggplant parmesan just for you!
Baked Eggplant Parmesan
• 1 large eggplant
• 1 tbsp olive oil
• 12 oz fat free ricotta
• 1/4 cup + 2 tbsp Parmesan Cheese, grated
• 1/4 cup fresh parsley, chopped
• 2 large eggs
• 2 cups Italian Cheese
• 3 cups spaghetti sauce
• salt
Start by making the sauce if you don't have any already made. While the sauce simmers, peel and slice the eggplant into 1/4 inch thick slices. Lightly salt the slices and lay on paper towels to soak up any extra moisture.
Preheat oven to 450°. Brush eggplant lightly with olive oil on both sides and place on cookie sheets. Bake for 30-40 minutes, turning half way through until eggplant is golden brown.
In a medium bowl combine ricotta, eggs, parsley and 1/4 cup of grated cheese.
In a 9x9 baking dish, put a little sauce on the bottom of the dish and put a layer of eggplant to cover the bottom of the dish. Top with 1/3 of the ricotta cheese mixture, Italian cheese and sauce Add another layer of eggplant and repeat the ricotta cheese, mozzarella cheese and sauce until everything is used up. Top with sauce and the mozzarella cheese and the remaining grated cheese.
Cover with foil and bake until cheese is melted and everything is bubbling, about 30 minutes at 400°. Remove foil and bake an additional 8-10 minutes. Take it out of the oven and let it sit about 10 minutes before cutting if you can wait that long.

Will my dreams become nightmares?
Yesterday was an exciting day for me as I read over the internet that Dominos was going to offer gluten free pizza. I use to love Dominos while living in Guatemala so I thought I could pick up a pizza and dream of the old days. Then the word came out that although they were labeling their pizza as gluten free it will not be safe for those suffering from celiac disease but will be safe for those with mild gluten intolerance? Now though I have a severe wheat allergy and gluten intolerance I'm afraid to pick up my pizza if I do maybe my dreams may become nightmares.
