Easy Gluten Free Apple Crisp


Ingredients:

6 apples, peeled and sliced
2 Tbsp Stevia
1 3/4 tsp ground cinnamon, divided
1 1/2 tsp lemon juice
1 cup light brown sugar
3/4 cup Gluten Free oats
3/4 cup Gluten Free all-purpose flour
1/2 cup cold butter, diced into small cubes

Instructions:

Preheat oven to 350 F degrees.  Butter an 8x8 baking dish, or spray with non-stick cooking spray.  Set aside.

In a mixing bowl, add chopped apples, granulated sugar, 3/4 tsp of the cinnamon and lemon juice.  Stir to combine, then transfer to prepared baking dish.

In a separate mixing bowl, add topping ingredients (brown sugar, oats, flour, 1 tsp cinnamon, salt, and diced cold butter).  Use a pastry cutter to cut the butter into the oat mixture, using a slight downward twisting motion, until mixture resembled pea-sized crumbs.  Alternatively, you can use two forks or even your hands to cut butter into the mixture.

Spread topping over apples in baking dish, and gently pat to even it out.  Bake 40-50 minutes, until golden brown and bubbly.

Serve warm with ice cream or whipped topping.

Super Easy Four Ingredient Apple Cake

I made this cake gluten free by using gluten free ingredients. So simple and we loved it!

Super Easy Four Ingredient Apple Cake

Ingredients: 

1 box, Gluten Free yellow cake mix, plus ingredients
2- 21 oz cans apple pie mix
1/2 cup (1 stick) butter
1/2 cup water
Whip Topping to Garnish

Directions: 

Preheat oven to 350 degrees. Spray 9 x 12 cake pan with non stick cooking spray Spread apples on bottom on the pan.
Make cake mix according to the box directions. Pour cake batter on top of apples.
Melt butter with water and pour on top of cake batter. Bake for 50-60 minutes or toothpick inserted comes out clean.

Easy Carmel Apple Snack Cake

Before an extensive surgery on my hand I decided to make a snack cake, not dessert, to have on hand. This recipe sounded perfect so I altered it to be gluten free and made it yesterday. It is really good and will work great for a snack or dessert with the caramel topping.

It was very good and Honey and I loved having a treat for breakfast or snack.

With no added sugar or butter this also is a healthier treat.

Ingredients:

1 box gluten free yellow cake mix
3.4oz box instant white chocolate pudding
1 cup water
4 eggs
1 cup applesauce
3 apples, peeled and diced small
1/2 cup caramel ice cream topping


Instructions:
 
Preheat oven to 350 degrees and grease bundt pan, set to the side.
In a large bowl, combine dry cake mix and dry pudding mix. 
Add water, eggs and applesauce. Beat with electric mixer until combined well.
Bake for 55 - 60 minutes. Remove from oven and let cool completely.
Invert onto a cake place and drizzle with caramel or add caramel to each piece before serving.

Gluten Free Apple Crumb Dessert

Recently I had some apples that were going bad, I decided to make something with them instead of throwing them out and I'm so glad I did.  What do you do with your over ripe apples?

This turned out great a moist apple pie like inside with a crunchy topping. YUM

Gluten Free Apple Crumb Dessert
4 cups chopped apples
1 box of your favorite gluten free yellow cake mix
2 TBS Lemon Juice
1/4 cup Brown Sugar
1 TBS Cinnamon
1/2 TSP Nutmeg 
3/4 cup butter, melted 
 
Preheat oven to 350. Mix all dry ingredients except for cake mix and set to the side. Peel and chop apples toss the lemon juice as you go. Mix apples with premixed dry ingredients. Put apples in a 9x9 cake pan. Sprinkle yellow cake mix on top. Pour melted butter over cake mix.

Bake until brown and bubbly

Mini Apple Pie

Honey's favorite dessert is homemade apple pie. We've been trying to eat healthier so I have not made one in a while. When planning something special for Valentines I decided that I wanted to make him a treat instead of buying one, so much better for you. I didn't want to make it gluten free because after all it was to be Honey's treat and not mine. So what better treat than his own personal Apple pie.

So after dinner at our favorite Italian restaurant Honey had Apple pie. I had one happy man for Valentines. 

He also made brownie points by buying me a piece of my favorite pottery by Etta B.

By the way you could easily make it gf, just used a gf pie crust and substitute corn starch for the flour.

Here's what I did:


Mini Apple Pie


Ingredients:
1 Pkg Pillsbury Prepared Pie Crust
2 Granny Smith Apples, quartered, peeled and thinly sliced
1 TBLS Lemon Juice
1/4 Cup Splenda
1/2 TBLS Flour
1/2 TBLS Cinnamon 
1/4 TSP Nutmeg
1 TBLS Salted Butter


Directions: 
Preheat oven to 375.
Cut pie crust to fit small plate. I used a pottery bowl. After placing in plate cut a few slits and pre-bake for about 5 minutes. Set to the side.
Peel and cut apples into small thin slices.
Place in a bowl and toss with lemon juice.
Combine spices and toss with apples.
Place in pie shell.
Slice butter thin and place over Apple mixture.
Either roll out left over pie crust or cut in strips and place over top of pie.
Bake for 30 minutes or until golden brown and bubbly.

About This Recipe

While deciding what to bake for Thanksgiving I always ask the family what they want. Honey's favorite pie is apple so of course he asked for one. I looked at several apple pie recipes I had on hand but found this one at food.com and decided that I wanted to try it.

It was sugar free but NOT gluten free so I asked Honey to be honest and let me know what he thought. Obviously he bragged on it a lot because my Dad came in for a piece to see what Honey was talking about.

Ingredients

    • 1 cup Splenda sugar substitute
    • 1 tablespoon flour
    • 1 tablespoon ground cinnamon
    • 5 granny smith apples, peeled and sliced
    • 1 golden delicious apple, peeled and sliced
    • 1 tablespoon butter, cut up
    • 1 (15 ounce) packages of pillsbury refrigerated pie crusts

Directions

  1. Prepare piecrusts according to package directions, fit 1 piecrust into 9 inch pie plate.
  2. Stir together Splenda, flour cinnamon mixture.
  3. Stir and coat apples with flour sugar mixture, pour into pie plate, dot with pieces of butter.
  4. Place remaining pie crust on top, crimp edges and make slits in top crust or pierce evenly with a fork to allow steam to escape during baking.
  5. Bake at 350 degrees for 50-55 minutes.
  6. Makes 8 servings.
So since going sugar free this will be our new apple pie recipe and maybe next time I'll use a gluten free pie crust and cornstarch in place of flour so I can try it.

Apple Spice Muffins

This is sooo easy and I promise YUMMY! I made these last week while we were having a ice storm and Honey told me one hundred times that he didn't care if they were gluten free they were the best muffins I have ever made. So try some for yourself and tell me what you think!


Apple Spice Muffins

Ingredients:
2 cups biscuit mix; Pamela's baking and pancake mix or Bisquick
¾ cup plus 2TBLS sugar (I use Splenda)
2 eggs
1 cup 8-oz. sour cream
2 Granny Smith apples peeled, chopped and slightly cooked
1/4 tsp cinnamon
cinnamon sugar

Instructions
:
In a bowl, combine the baking mix, 3/4 cup sugar and cinnamon. In another bowl, combine the eggs and sour cream; stir into dry ingredients just until combined. Fold in the cooked apples. Fill greased muffin cups three-fourths full.

Sprinkle with cinnamon sugar.

Bake at 375 degrees for 20-25 minutes or until a toothpick comes out clean. Cool for 5-minuts before removing from pan to a wire rack.

Fried Apple Recipe and Punkin

The first of the week I went and took care of Punkin for the day so A could go to the dentist. I love my grand-babies soooo much and enjoy moments spent with them. When Punkin woke up from her nap
A sandwich, I think this may be her favorite meal right now.

I'm sure she was saying mmmmmmm.

With our sandwich we had a little string cheese

and it was soo good.

After she finished eating I decided to cook some apples for A and B. I had carried them some from our trees and they already had some so I didn't want them to go to waste.

I had to try them, I didn't want them to make anyone sick! Smile

So the next day I went to the dentist myself and then drove back to the hills, in the rain mind ya. It was awful I thought at times that I was going to have to pull off the road, I could barely see anything. After this drive I was worn out so I decided to clean the house some instead of starting to put up the apples.

The next morning I had to start on the apples. I was sooo looking forward to it that I didn't think about all the consequences involved. I didn't think about my poor hands having to peal all those things and the pain I must endure. Our family has a history of arthritis and I'm afraid that I already have it in my hands. It was tough but I managed to get it done most of it done. I decided to leave about a dozen to cook with for the weekend.




Honey knew that I was working on them so he came in looking forward to eating fried apples, imagine the disappointment when I told him that I had put all of them in the freezer. I promised that he would get to enjoy them later. I'm so glad that I did this because it will be worth it this winter and I'm also so glad it is done and over.

As for the recipe I didn't really measure anything so I'm guesstamating what I did. Adjust to your own taste.

Fried Apples

Ingredients:
¼ c. butter
6 lg. granny smith (my apples are a lot like granny smith) apples; peeled, cored & sliced
1 c. sugar (I used sugar blend)
1 tsp. ground cinnamon

Instructions:

Melt butter in large skillet boiler over medium-high heat. Add apples, sugar and cinnamon. Saute until apples are tender.

I didn't know they existed... now I need recipes!

 Ok, now to show my ignorance, I know nothing about trees. I remember in high school our teacher taking us on nature walks and pointing out different trees and the history behind them. I also remember thinking what is he talking about? I never could get the gist of it. Well Honey and I were passing by our house a couple of days ago and I noticed something hanging from several of our trees. I asked, "honey what is that"? And he told me that's apples. Friend I had no clue that I have fruit trees in my yard. I've told you before I'm not an outside girl as much as I would like to be, oh I use to spend a lot of time outside but now when I go out my face itches, I start sneezing and I stop up tight as a drum besides it being over 100 degrees here right now. So I have chosen to go out on short walks to the mail box and maybe pull a few blades of grass from my flower beds, don't come looking because I haven't done that lately, or sweep off the front porch or deck other than that I am in the house where it is comfy and cool! Ahhhhh

Well Honey and I picked the apples off our trees, we don't know if they are ripe or not we just picked what felt right. But listen to me friend we picked around a bushel! Yes, you understood me we went out dressed nicely thinking that we would get about one dozen apples and surprise, surprise! I plan to make some dishes with my apples but first I have a chore on the farm.

By the way we met some more neighbors, they were on their afternoon walk and couldn't help but notice the crazy lady up in the tree. Holy Moly They chatted with us as they walked to the end of the street and turned around.

Now besides an apples tree we have this little jewel and I don't feel quiet so bad because Honey doesn't know what it is either. Would you be so kind as to identify it for us? You can just leave me a comment, we'd sure appreciate it!
It's leaves are different from the apple trees and it has a slightly fuzzy feel, by the way it didn't feel right so we didn't pick it! Winky


Sunday morning we went to church and when parking we noticed that the parking lot was full of antique cars. Now I don't guess I'm the sharpest tool in the shed because I really thought that they were there from a antique car show. Honey said that he thought they were part of the movie "The Help" being filmed in town but I disagreed. Well, he was right, it seems the church parking lot has the campers of the set up crews, cars, props and utility type vehicles parked there for now because one of the sites for "The Help" is right next door to the church. That afternoon we drove by and I took my camera but the crew were out working so I didn't want to look like a complete nut and only took a few photos on the run.




After reading the book, which I loved by the way, I'd like to see some of the stars in the future. Maybe???????
