Chicken Broccoli Casserole

This recipe brings back so many memories, the first time I had it I was in Guatemala on a mission trip. After living their for several years it became a favorite of mine. When we returned to the states I had to call Marion (who was over the kitchen in Guatemala) and ask could she give me the recipe, I love it that much. Everyone in my family loves it too!

It is great all around, the creaminess of the soup paired with chicken, broccoli and the different spices can't be beat.  And the great part about it is, it is easily made gluten free!


Chicken Broccoli Casserole

Ingredients:

1 cup mayonnaise
2 eggs
1 onion; chopped into small pieces
1 can cream of mushroom soup
1 ½ cups water
1 tsp. garlic salt
4 cups broccoli; partially cooked
1 chicken; cooked and chopped
2 cups grated cheddar cheese
1 cup breadcrumbs
*Make sure your ingredients are gluten free if following a gluten free diet!

Instructions:
Mix the first six ingredients together and set aside. Mix the chicken, broccoli, breadcrumbs and cheese together then add the mayonnaise mixture to it. Put in a 3x9x12 dish and bake in the oven for 1-hour at 350 degrees.

Home From Guatemala

I just returned from a ten day trip to Guatemala. I once lived and worked here and have always loved this country, it will forever be in my heart! I was apprehensive about how I would be able to communicate with them after so many years but God was gracious and I did just fine.

I traveled with a youth group from the church where I had grown up. I didn't really know one of these kids but I grew up with their leader and many of their parents. I truly felt that this was God's will for me to return for the first time after eleven years. I knew that it would be awesome but emotional for me and it was both.

When I entered the country it was like I was going home, although this is not home anymore I can't describe the feeling I felt.

I had no longer been at the house where we were to stay when a friend from the past came for a visit and brought me two dozen roses. They were beautiful and everyone was able to enjoy them.

The next day we left for the mountains of Quiche where we visited and worked in three feeding centers, attended two church services, celebrated the fourth of July with our Guatemalan friends, participated in an obstacle course on the side of a mountain and painted the outside of one of the feeding centers. The days began early and ended late but it was a great feeling at the end of each day.

On Friday I was able to visit in the home of one of the children that I sponsor through this program. The was definitely one of the highlights of my trip.

After lunch on Friday we headed back to Antigua where we would be the rest of our time here.

On Saturday we visited Hermano Pedro Hospital a hospital for the severely handicapped.  Here we were able to push some of the children around the grounds in their wheelchairs. It is really a sad place but what a joy to see those children smile. I touched the leg of one little boy while praying for him and he grabbed my hand and place it on the back of his chair. I took it that he wanted me to push so push I did. Yes, we all shed many a tear but what a blessing it was. No pictures were allowed here.

Sunday morning we had devotions and then walked to the foot of the cross where we prayed over the city of Antigua. WOW

Sunday night we attended a youth group service in one of the local church. I was so excited when I hear this because a child I sponsored for 13-years was in this group. She was there and what a great reunion we had. Such a blessing to be able to invest in the life of a child who is now on the worship and evangelism team of her church.

On Monday I was able to visit in the home of another child I sponsor. Also another blessing was the guy who took us to the house was a great friend and brother of mine Coca. We enjoyed the walk over and just talking about old times.

The rest of our time was spent sharing and shopping before we left to return to the states on Tuesday.

God took care of me on this trip, as always, I had no problems at all with allergies, headaches, sneezing etc. I had taken a carry-on with some gluten free good and my medicines in it. I had to supplement a few meals but all in all there was plenty I could eat. Once the cooks who where friends of mine from the past found out about my diet they accompanied me as well as they could. When they had fried foods I ate fresh salad which was great and fruit. The fruit and vegetables in Guatemala can not be beat they are just not as good here in the states.

Shoes I'd love to have......

I have really bad feet. I had a bout of plantar fascitis a few years ago plus a few months after that I began to have a problem with a joint on my other foot. I guess it stems from all those years of walking the mountains in Guatemala, but I'd do it again in a minute. So I have been on the hunt for some better shoes. I have a few pair of really good shoes but then some of my favorite are REALLY BAD shoes. I've decided to buy a few pair of good shoes to replace the bad ones. My feet are worth throwing away those things that hurt me. :-(

After talking to a few others on their experience with shoes and reading a ton of reviews here are some of the shoes I would love to have.....


















































I'm just ready for good shoes, so I have ordered three pair. These feet are covering many a mile lately and I want them to STOP hurting.

Visiting with Friends Gluten Free style

We spent the end of last week on the farm helping out B. During this time A and I enjoyed some shopping. We had to buy things to get ready for punkin's 1st birthday! I can't believe she will be one before we know it and I also wanted to buy a few things for the house. Wouldn't you know I had the money and the plan but did not buy one thing! Uggg Either I didn't find exactly what I had in mind, or I talked myself right out of it! I'm going here in Greenwood soon and buy some of these items!






I just read where the filming of "The Help" began while I was at the farm. Does that mean that life will change for us living here? I think so but it will be a good thing. I am almost finished reading the book and it is really good and getting better all the time. I'll have to let you know the end results!




 
I recently purchased the following items at one of our local grocery stores. I have ate some of the Cookie Crisp but have not tried the other two. When you live in the South where a lot of GF things are not available and you find new things it's like Christmas! You may want to shop for them here!

Here are photos of our friends who we met in Tuscaloosa. We worked with this family in a mission in Guatemala and they are great people. It was so much fun to be able to meet with them and visit around lunch. We miss all of our friends.

Anna and I, better known to me as Maria. Sorry girl Anna just does not seem right! We have shopped a many a grocery store in Guatemala and now we both eat Gluten-Free! Every time I watch a basketball game on TV which is quiet often I think of Sid and Maria. We watched games with them back then and little did I know that one day I would be a basketball fanatic. Shelby, Andrea and Rebecca. I remember when Shelby was born in Guate. I took tons of photos of her because I didn't believed that God would again create a child so beautiful. And he may not have until I had grand-children! Sorry Shelby one day you'll understand.

Family, Entertainment, and Gluten-Free living

I have finely found the time to set down and work on a blog. I want to recap some of our latest events. Here is our oldest daughter Mary holding her new niece Austin.

We enjoyed our time together and look forward to seeing Mary and her family soon. I talked to Mary recently and it appears Joshua will be born anytime after Thanksgiving, I'll try to keep you posted on that. In the meantime I need to start planning to go to Indiana! :)

Last weekend we took Austin to her first college men's basketball game. It was a scrimmage game and we went to see how she would do before we try getting her a ticket to the other games. Can you believe that a baby has to have a ticket to go to MSU ballgames? Well, she did GREAT, she slept practically the whole time. Needless to say we are looking forward to the basketball season as we can all go as a family.

Mama Marion!

We just had a visit from Fred and Marion. Ashia and I worked with Fred and Marion in Guatemala for years and while there they became my parents and Ashia's grand-parents. It sure was fun having them visit and meet our little Austin. Thank you Fred and Marion and we look forward to seeing you again soon. We love you!

While I had company and did a lot of cooking it was many of the same things that I cook a lot. Here is one of the recipes that we love. This time I used "Pamela's Baking Mix" instead of the first five dry ingredients. They were wonderful and didn't last long at all!



Banana Nut Muffins
Servings: 12

Combine in Large Bowl
3 bananas; very ripe, peeled & mashed
¼ c. oil
1 c. dark brown sugar
2 tsp. pure vanilla extract
1 egg
Whisk together in separate bowl
1 ½ c. GF all purpose flour
1 tsp. baking soda
2 tsp baking powder
¼ tsp. salt
1 tsp. xanthan gum
1 tsp. cinnamon
¼ tsp nutmeg
½ c. mini chocolate chips optional
½ c. nuts; chopped optional
½ c. dried fruit optional

Instructions:
Preheat oven to 375 degrees F. Line 12 muffin cups with paper liners.
Add the dry ingredients into the banana mixture and stir until well blended.
Mix in your choice of add-ins. Spoon batter into muffin cups and bake for about 20 or until a wooden toothpick inserted into the center comes out clean.. Cool muffins on wire rack. Wrap leftover muffins; bag and freeze for easy on the go treats. Reheat briefly in microwave, if you wish.
