Gluten Free Tamale Pie

 A great quick one dish meal full of meat and vegetables with a sweet cornbread topping.

Ingredients:

For the filling:

  • 1-pound lean ground beef
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 15 ounces Southwest Zest by Bush's Sidekicks 
  • 15 ounces corn
  • 15 ounces petite diced tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon cumin
  • ¼ teaspoon black pepper
  • 1 ⅓ cups cheddar cheese shredded (divided)

CORN BREAD TOPPING*

  • ¼ cup mayonnaise
  • 1 cup Krusteaz GF Honey Cornbread Mix
  • 1 egg
  • ½ cup buttermilk

INSTRUCTIONS

  • Place ground beef, onion, and garlic in a large cast iron skillet and cook over medium-high heat until meat is browned, and onions are translucent. Drain off oil.
  • Mix in the beans, corn, tomatoes, tomato paste, and seasonings. Bring to a simmer and cook for 10 minutes while you make the cornbread batter.
  • Preheat oven to 375°F.
  • For the cornbread batter, mix all ingredients until smooth. Add remaining cornbread ingredients and stir until combined.
  • Stir 1 cup cheese into the meat mixture after it simmers. Pack the mixture down into the pan to make a smooth even surface. Spread the cornbread batter evenly over the top. Sprinkle with remaining ⅓ cup cheese and bake for 25-30 minutes or until golden.
  • Let the pie rest for 5-10 minutes before slicing and serving.

Gluten Free Easy Cheeseburger Pie

Gluten Free Easy Cheeseburger Pie

1 lb lean (at least 80%) ground beef
1 medium onion, chopped
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Bisquick™ Gluten Free mix
1 cup milk
3 eggs 
 
salt and pepper to tast

Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. In 10-inch skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain. Stir in salt and pepper. Spread in pie plate; sprinkle with cheese.
In medium bowl, stir Bisquick mix, milk and eggs until blended. Pour into pie plate.
Bake 25 to 30 minutes or until knife inserted in center comes out clean.
 
You can serve with your favorite vegetable or a salad and you have a meal!

Yummy Sloppy Joes

Yeah it's finally football season and this southern girl loves her football. We have a tradition in our house that when our Bulldogs are playing we eat a concession type meal made up of hotdogs and all the fixings. Today wouldn't you know Honey didn't want hotdogs so I decided to make sloppy joes. Here's my recipe and I'm sticking to it!


Yummy Sloppy Joes

Makes 8 to 10 sandwiches

Ingredients:
2 pounds great meat of your choice, I used vension and pork
1 medium onion, chopped
2 cups ketchup
1/2 cup water
1/4 cup brown sugar
4 tsp Worcestershire sauce
4 tsp prepared mustard
1 tsp garlic salt
Buns or rolls of your choice

 Directions:
In a large skillet saucepan brown meat with chopped onion added. Drain excess fat.

Stir in ketchup, water, brown sugar, Worcestershire sauce, and garlic salt. Bring to a boil, reduce heat and let simmer for 30 to 40 minutes.

Serve on your favorite bun, roll or bread! Shown here in gluten free bread!

Gluten Free Baked Meatballs


These were wonderful! I can see us eating a lot of them in the future!

Gluten Free Baked Meatballs

Ingredients:
1 pound ground beef, pork or venison (I use venison)
2 eggs, beaten with 1/2 cup milk
1/2 cup grated Parmesan
1 cup gf bread crumbs (I used Glutino)
1 TBS minced onioin
1-2 cloves garlic, minced
1/2 tsp oregano
1 tsp salt
freshly ground pepper to taste

2 TBS parsley flakes
2 TBS basil leaves


Directions:
Mix all ingredients with hands. Form into golf ball sized meatballs. Bake at 350 degrees for 30 minutes.

Gluten-Free Oven Barbacue Baked Ribs & Southern Fried Okra


We are home from the Delta once again. I get confused because there are dear people in both of these communities so home for me truly is where the heart is and that's Macon/Inverness! Steve has been irrigating beans and cleaning up around the place and I cleaned up inside our castle (camper). I enjoyed updating everything on the internet that I needed to, my connection there was super fast and I miss it sooo much. They must have added a tower to the Inverness area or something, really guys I thought I was in a big city and I was sitting in a camper on our farm! :)


While in Inverness we frequently visit our favorite restaurant, "Hometown" not to mention it is the ONLY restaurant in the area! This trip Steve bought me a t-shirt that I will enjoy wearing in the days to come. Don't judge me until you have been there! It is like eating in the comforts of our own home, except for Steve won't allow me to wear my pajamas. Lol


Before we left Macon my Dad was visiting and he brought me some fresh vegetables out of his garden. I have listed two of the recipes below that I think you may be interested in, they were wonderful!

I cook these ribs pretty often and EVERYONE loves them This works with beef ribs as well as pork.




Oven Barbecued Ribs

Ingredients:
3-4 lbs. country style pork ribs
1 ½ cups water
1 cup ketchup
1/3 cup Worcestershire sauce
1 tsp. salt
1 tbs. chilli powder
½ tsp. onion powder
1/8 tsp. hot pepper sauce optional
2 TBLS. brown sugar optional
2 TBLS. cider vinegar optional
1 TBLS corn syrup optional

Instructions:
Place ribs in a greased roasting pan. Bake, uncovered at 350 degrees for 45 minutes. Meanwhile, in a saucepan, combine the remaining ingredients. Bring to a boil; cook for 1-minute. Drain ribs. Spoon sauce over top. Cover and bake for 1-1/2 hours. Uncover, bake 30 minutes longer, basting once with more sauce.



Southern Fried Okra
Ingredients:

Okra
buttermilk; sprinkle a small amount on Okra to moisten
all purpose flour (I use Bob Mills)
plain corn meal
Canola oil
salt and pepper to taste

Directions:

Wash and cut up the okra, let drain in a colander. Add oil to deep pan measure according to how much you are going to fry. You want enough to cover the okra. Put on medium to high heat. Mix dry ingredients well. Sprinkle okra with just enough buttermilk to give some moisture, don't put to much or it will be gummy, mix well. Sprinkle moist okra with dry mixture and toss to coat then spoon into hot oil. Fry until golden brown and ENJOY!!!!

This was so good, Ashia was there while I was cooking it and we snacked until I had to hide it so I would have enough for supper.
