Chicken Broccoli Casserole & a list of Christmas lights in our local area!

The girls are gone, Pepaw is running the vacuum cleaner and I am washing up the school girls cloths and cooking lunch and dinner. For lunch I am using some leftover chicken and making homemade chicken salad, a family favorite. For dinner I am making my "Chicken Broccoli Casserole" and serving it with a baby lettuce salad. The girls love this casserole so I thought it would be just the treat to serve before we go to view the "Lights Under Louisville", and maybe Momma will have some leftovers to serve them later.


Chicken Broccoli Casserole
Servings: 8
Cooking Time: 1 hour

Ingredients :
1 cup mayonnaise
2 eggs
1 onion; chopped into small pieces
1 can cream of mushroom soup
1 ½ cups water
1 tsp. garlic salt
4 cups broccoli; partially cooked
1 chicken; cooked and chopped
2 cups grated cheddar cheese
1 cup breadcrumbs

Instructions :
Mix the first six ingredients together and set aside. Mix the chicken, broccoli, breadcrumbs and cheese together then add the mayonnaise mixture to it. Put in a 3x9x12 dish and bake in the oven for 1-hour at 350 degrees.

I make this recipe gluten-free by using, Glutano "Cream of Mushroom Soup Mix".

 


 









We had several special times of singing Christmas carols with the girls. I love, love Christmas music so that was right down my alley.



"Lights Under Louisville" was a lot of fun it was cold and rainy so driving through a cavern looking at Christmas lights was the thing to do. These are special times that we will remember for years to come, I hope the girls do.  For all of you local people I ran across this and it looks like fun too. Baby Joshua got home right before we left for Louisville and after our tour we hurried home to see him again.

Steve and I will be traveling tomorrow! I'm excited about making plans for Christmas with our SMALL family. Our older girls and their families will not be with us and we'll dearly miss them but we'll try to make the best of it until we're able to all be together again!!!

We LOVE ALL our kids from the youngest to the oldest!!!!

A Great Night in The Good's Household,

Man, last night Steve and I had the best supper, just don't count the calories! :)  I made a small roast and crreamed potatoes. To cook the roast I rubbed it with salt and pepper and then sprinkled "Glutano Cream of Mushroom Soup Base" all over it. I added just enough water to cover the bottom of the crockpot and let it cook all day. Then I made creamed potatoes from scratch. I was going to cook other items but we are leaving for Indiana soon and so we gorged on meat and potatoes. I was sooo good, I wish I had leftovers!

After supper Ben and Ashia brought Austin over to stay with us while they went to a high school basketball game. We enjoyed our time with her, we'll sure miss her while we are in Indiana.



She is beginning to watch movement and Steve and I had college basketball on TV. She would just stare at the screen, Steve said, "Oh, no your rubbing off on her." I wish that were so but I really think she would watch anything with a lot of movement at this time.




We talked a lot and she would coo and laugh, she is so much fun! I didn't take the little hat off for a long time because I was cold and it was so cute. When I did take it off her little head was sweaty, bad Gammy, she was much happier then.

Thank you Ben and Ashia for allowing us to have time with your little princess!

We'll be leaving for Indiana Sunday if nothing changes to receive our new Christmas present Joshua William!!!! YEAH

School Lunches can be great and easy if your eating gluten-free.

While I was in the Delta with Steve we had several rain showers. I would call them a big rain but many would not. Anytime rain is running in our yard, it's a big rain to me. Steve was able to continue harvesting beans in spite of the rain. It was raining on the part of the farm our camper is on but was night raining across the field where Steve was harvesting. We're thankful that we were able to take care of all the beans that needed immediate attention!

 
I left the Delta to come home and go to Jackson with Ashia for a baby shower, well it never happened! It appears Baby Austin is about ready to make her entrance into the world, she tried to arrive 5-weeks early. Mom and Dad spent the night at the hospital and after medicine, many prayers and observation they allowed Dad to bring Mom back home for as long as she can make it. We had to cancel the baby shower. Maybe Austin Rivers is going to be a raging river, I think she already has a mind of her own.

We are still at home counting contractions and getting everything ready for Austin's arrival which could be anytime now. Ben (the Dad) and I have done some serious washing and putting away baby clothes. One of our hardest responsibilities is keeping Ashia on the bed or couch, although she is doing well.

The final touches in getting ready for Austin's arrival. Just two of many MSU gifts. Thank you Pam and Juliana, we appreciate  your helping us prepare for our little Bulldog fan!


Now on to something gluten free....
Preparing lunches for your child can be easy and taste great. Make your child feel normal in front of their friends. Now, you have to remember I am a southern bell and we have a history of baking and frying. I fry very little anymore mostly due to the mess even though we raise Catfish and there is nothing in this world any better than fried catfish, so I do fry them from time to time.


Back to the lunches, make your own bread or use "Gluten Free Pantry's" Favorite Sandwich Bread Mix. Glutino Gluten Free Pantry Favorite Sandwich Bread Mix, 22-Ounce Boxes (Pack of 6) (review here) That's what I use, it is easy and taste wonderful! I use this bread and make sandwiches of all types such as ham and cheese, hot or cold, sandwiches. YUM


You can also use left over roast and make barbecue with it, use this for barbecue sandwiches. Hunts thick and rich Honey Mustard is gluten-free and how easy, you just poor it right out of the bottle. Serve a salad on the side or eat with your favorite chips.



Make up your favorite Tuna or Chicken Salad recipe and serve it with your favorite gluten-free crackers. My favorite crackers are "Glutino Table Crackers 7 oz. (Pack of 12). I also love fruit with these salads. :) You can also use the salad and make a sandwich or use it in a green salad. These salads are so versatile, quick and easy.

So don't think only gluten-free but think quick, easy and GOOD!

Hormel Can Chicken Breast & General Mills


I am back in the hot Mississippi Delta this week. The camper is just now cooling off and I don't plan to heat it up again. I'm going to boil eggs and make a chicken salad to eat on a bed of lettuce for supper (yes supper I'm southern). I've bought Steve some crackers and I'll use my Ranch Rice snack cakes (bite size). I am using them rather than my usual "Glutano" brand Gluten-Free crackers due to calorie intake (although they are the BEST). Lately I am putting on the pounds, I hate to complain though because when I do it seems my stomach starts giving me problems and I can hardly eat (that hasn't happened in a while).


I'll be using "Harmel" caned chicken breast. Not only is it gluten-free it is 97% fat free, another plus for my summer meal.

Ok, lately I blogged about the sweet corn that we bought from the Delta. Ashia (my daughter) and I agree that is the sweetest corn we have EVER put in our mouths. It's like eating candy on a cob! A lot of people don't like it because they say it's too sweet, not us we can't get enough!

I recently read a blog More Gluten-Free Cereal from General Mills you need to read this. It not only tells you what General Mills is doing, it give you a list of the different cereals you can eat! I have been eating the Chex cereals for a long time and love them!!! I am sooo excited that many companies are recognizing the fact that many of us have to live gluten-free.
