Minny's Chocolate Pie

Since 'The Help" first hit the big screen I have been making a few of the recipes taken from the show. We moved to Greenwood at the beginning of the shooting of "The Help" and I was obsessed. I loved the book and read anything else I could find on the web relating to it. Somewhere I came across a blog with recipes from the movie and this one quickly became one of our favorites and NO I do not add the secret ingredient!

So I wanted to share with you:

Minny's Chocolate Pie

Ingredients:

1 packaged pie dough crust, such as Pillsbury
1 1/2 cup(s) sugar
3 tablespoon(s) unsweetened cocoa powder
4 tablespoon(s) unsalted butter, melted
2 large eggs, beaten
3/4 cup(s) evaporated milk
1 teaspoon(s) pure vanilla extract
1/4 teaspoon(s) salt


Directions:

Preheat the oven to 350 degrees F. Ease the pie crust into a 9-inch pie plate and crimp the edges decoratively. Prick the crust lightly with a fork. Line the crust with foil or parchment paper and fill with pie weights or dried beans. Bake for 15 minutes or until set. Remove the foil and weights and bake for about 5 minutes longer, just until the crust is dry but not browned.

Meanwhile, in a bowl, whisk the sugar with the cocoa powder, butter, eggs, evaporated milk, vanilla, and salt until smooth.

Pour the filling into the pie shell and bake for about 45 minutes, until the filling is set around the edges but a little jiggly in the center. Cover the crust with strips of foil halfway through baking.

Transfer the pie to a rack and let cool completely before cutting into wedges. You can serve with whipped cream if you like.

The pie will puff up but sink down as it cools.

A Happy Thanksgiving for sure!

We had a Happy Thanksgiving for sure! We love all being together for the holidays, I can't imagine always being home alone. We have so much to be thankful for!

Due to my arthritis I decided to try a few new easy pie recipes and they were an immediate hit. My family loved them and I will be using them for years to come. They were taken from a recipe book I have of the movie, "The Help".

Here are a few photos of our time together as well as some of the food!


Bennett is going everywhere now, he smiles and laughs a lot and brought joy to our celebration. Above he is pictured with my Dad.

The food was some of the best yet!

Austin did wonderful you can tell she is growing into a young lady. Here she is eating (which is a real chore she told me that she doesn't like food) and then Dad took her out and let her run around some.

That was all the family for this year. Our other children were unable to be with us. We hope to see the others in December.

Now I am taking the day off to rest and watch football but hope to start decorating for Christmas soon! The month of December is already filling up and getting quite crazy but I wouldn't have it any other way!

Gluten-Free Life as a Grandmother,

Steve's been out of town the last few days, he's trying to wrap up his work in the Delta. Thursday night we used Steve's ticket for Austin and went to the basketball game. Can you believe that she has to have a ticket? I mean really all she does is lay in our lap and sleep! Everyone gets a kick out of her being able to sleep through my screaming over her head. I try to hold it back and not scream too loud I mean I don't want her to have hearing problems! We are excited about this year and our adventure with basketball! GO DAWGS


Does life ever slow down? I guess only when you are dead! We have been in the road everyday for weeks now. I honestly can't remember a day when I have had no where to go. Since Steve has been gone I've been spending the night with Ben and Ashia. I feel like such an intruder but last night Ashia bribed me to stay so I guess I'm a wanted intruder. I help with Austin in the mornings but they take care of her all night. She is becoming such a big girl and is sleeping much better at night although she has not been wanting to sleep during the day!


I just talked to Mary, her last appointment the Doctor said that we would have a baby around the second week of December. She is becoming increasingly more uncomfortable and is thinking a baby sooner than that would be ok. We'll see what the Doctor says next week. If nothing changes the  baby will be named, drum roll please, Joshua William!!!!!

I've been taking request from the family on what they want to eat for Thanksgiving. Here is the latest request.....

Chocolate Pie
Servings: 8 Category: Dessert
Cooking Time: 15 minutes
Cuisine: American
Preparation Time: 20 minutes Rating:

Ingredients:
2 eggs; separated and save the whites
1 cup sugar
3 Tbsp cocoa powder
1 Tbsp cornstarch
2 cups cream or milk
1 tsp vanilla
2 Tbsp butter

Instructions:
In a sauce pan, combine egg yolks, sugar, cocoa, cornstarch and cream. Stir well. Cook over low heat until it thickens. Add vanilla and butter. Stir until butter is melted and mixed well. Pour into baked pie crust.
Meringue:
2 egg whites, 1/4 cup sugar, 1 tsp vanilla. Beat egg whites until stiff. Gradually add sugar and vanilla, beat until well blended. Pour on top of pie and brown under oven broiler.

To make gluten-free I always use Gluten-Free Pantry's "Perfect Pie Crust Mix". This mix can be bought in your local Kroger!
