Happy Easter Y'all!

I'm getting ready to go celebrate Easter with our youngest children the only wish I have at this point is that we all could be together as a family but since we can't I'll make the best of it.

I have made simple chocolate cupcakes for me and my Punkin to decorate. Now the problem is Punkin will probably apply the frosting and then lick some of it off, its a good thing only Dad, Mom and Pepaw will be eating them! This is how I make memories with the grand-children. I bought my ingredients to do this with my older grandchildren while they were in town but I wasn't home due to a stomach procedure and didn't have the chance to do it so now Punkin and I will decorate them.

Here are the cupcakes before taking them to Starkvegas and if I remember I'll take a photo of the finished product.


For my gluten free dessert I made my Chocolate Chip Cheese Bars, I haven't had them in a while and everyone loves them and they are super easy so it was a no brainer!
I changed my recipe up a little, I added a pudding mix to my cookie mix and a teaspoon of vanilla to my cream cheese mixture. I also used one forth of the mix for the bottom crust and crumbled the rest over the top. It make a crunchier topping with a rich creamy middle and I think I like it a lot better. Having the Time of My Life

There has not been much time for blogging as we have a new baby in the family and Gammy is busy helping out with big sister.

Bennett Cole was born Friday, March 2nd weighing 6 lbs and 6 oz and 21 in long. God has blessed us greatly his big sister was around 4-weeks early and so was Bennett but both have been perfectly healthy babies. I guess Mom just grows them quicker than most. ha

Big sister still doesn't know what to think about baby Bennett she asks him to play with her all the time but he just sleeps. She gets excited when he opens his eyes but other than that she's too busy to notice what he does. We are praying baby Bennett is a calm easy going child as big sister is active enough for both of them.

I'll be posting more great recipes in the near future but right now I'm spending all my time giving hugs and kisses.

Sharing our Thanksgiving with a Gluten Free Butterfinger Cake

We were blessed to be able to spend time with some of our children, grand-children and other family during Thanksgiving.

We ate some wonderful food and a lot of it I forgot to take photos of but I am posting one of my favorites below, so keep reading.

Gluten Free Butterfinger Cake 
1 box Betty Crocker German Chocolate GF cake mix, plus ingredients to make the cake
1 can sweetened condensed milk
1 jar Smucker's caramel ice cream topping
1 (8oz) tub Cool-Whip
4 regular sized Butterfinger candy bars, crushed

Bake cake according to direction on the package.

While cake is baking, mix milk and caramel topping until well blended. When the cake is done and while it's still hot, poke holes in it with a fork or straw. Pour milk mixture over the cake. Allow cake to cool completely.

Sprinkle two candy bars over cake. Spread Cool Whip over the top, then sprinkle the remaining candy bars on tip. Chill.

Oh Happy Day!


How many grand-babies can one family handle? We don't have a number for this because what is too many, is there such thing?

We have just found out that our youngest son and daughter are expecting their second child. This will make six grand-babies for us and we still don't have enough.
