Happy Easter Y'all!

I'm getting ready to go celebrate Easter with our youngest children the only wish I have at this point is that we all could be together as a family but since we can't I'll make the best of it.

I have made simple chocolate cupcakes for me and my Punkin to decorate. Now the problem is Punkin will probably apply the frosting and then lick some of it off, its a good thing only Dad, Mom and Pepaw will be eating them! This is how I make memories with the grand-children. I bought my ingredients to do this with my older grandchildren while they were in town but I wasn't home due to a stomach procedure and didn't have the chance to do it so now Punkin and I will decorate them.

Here are the cupcakes before taking them to Starkvegas and if I remember I'll take a photo of the finished product.

For my gluten free dessert I made my Chocolate Chip Cheese Bars, I haven't had them in a while and everyone loves them and they are super easy so it was a no brainer!
I changed my recipe up a little, I added a pudding mix to my cookie mix and a teaspoon of vanilla to my cream cheese mixture. I also used one forth of the mix for the bottom crust and crumbled the rest over the top. It make a crunchier topping with a rich creamy middle and I think I like it a lot better. You can find the recipe Here!

Have a great Easter friend and I'll see you after it's over!

To keep up with what our family is up too you can always click on the photo album at the bottom of this page. I try to blog more food than family but sometimes it's just impossible.

Thanks for stopping by y'all and please come again soon!

Today treats.....

I have been busy cooking for my family to come for a visit. I am so excited about spending my first Thanksgiving in my new home with my children and grand-children. We will be celebrating Thanksgiving and Christmas because our children who live away will not be able to return for Christmas.

The gifts are all wrapped, the house is clean and smells like a Holiday....

Here are a few items I have made, click on the link to get the recipe. It's all Good and it's gluten free!!!

Coffee Shop Fudge
My family loves fudge and some of us love coffee so I was so excited to find this recipe and give it a try.

Pumpkin Streusel Cheesecake Bars
Though Pumpkin is not my favorite, when I read the recipe for these bars I knew that I had to try them. They are wonderful, this may be the beginning of a new tradition

Boiled Cookies
I've been making this recipe since Ash was a little girl. Now I make it with gluten free pure rolled oats so that I can have one. I think the taste is a little different but we love them just the same.

2 cups sugar
3 TBL cocoa
1/2 cup milk
1/2 stick butter
1/2 cup peanut butter
1 tsp. vanilla
3 cups quick oats, uncooked
Nuts (optional)

Mix first 4 ingredients together. Boil for 1 minute in medium pan. Remove; add peanut butter, vanilla, uncooked oats and nuts. Stir only enough to blend and drop by spoon on waxed paper. Let set about 30 minutes.

I will also be making my famous Chicken and Dressing made with My Favorite Cornbread recipe.

Enjoy your Thanksgiving ya'll...

Company and Gluten Free German Chocolate Bundt Cake

I recently put some finishing touches on my decorating and this is all folks. I don't like to spend a lot of money just a little bit every year.

We've had a fun day today, Honey's parents came for a brief visit and we were able to show them around town. After a trip through the Hills we went to guess where? YOU GUESSED IT "Crystal Grill" for lunch and they agreed with everyone else it was wonderful. Then we continued to tour downtown and Grand Blvd and we visited The Museum of the Mississippi Delta, which I think they really enjoyed. After our museum tour Dad was more than ready to return home, you know how Dad's are they can't be away from home long! :-)

Me and Momma Joyce with our military coats on. In case you don't know she was the Rebel!

We didn't get a thing to drink!!!!

Father and Son, Two American Farmers

What fun we had and memories were made! Come see us again sometimes!!!

See you later friends!! Have a good weekend!

Teen on "Doc" diagnosed with Celiac Spru

I will be spending my Labor Day at a family reunion in Gadsden, AL. I am baking a cake to take with us, gluten-free of course. (recipe in next blog) One of the hardest parts about eating at a family reunion is the desserts. There is always an overabundance of food and more than enough that I can eat, but unless I carry a dessert with me there are never any that I can eat. Usually in a situation like this I eat some type of fruit salad for my dessert but this time I have decided to make a speacial cake that I love and carry it with me. I will be going with my Dad, Steve will be in the field working. I am hoping Ashia will go with us but she is sick at this time with sinus problems so she may not feel like it, we'll see. I am excited about seeing family on the Thacker's side once again.

I recently watched "Doc" on the Gospel Music Channel and I heard them diagnose a teenager with Celiac Spru. If you get the opportunity to watch Doc: "While You Were Snoring", you should. I have included as much information as I can find below.

Full Episode Summary: Clint Cassidy is a handsome country doctor from Montana who moves to the Big Apple. His down-to-earth style and bedside manner endears him to the patients at a Manhattan HMO, but he encounters resistance from his colleagues and the system. Without losing his values, common sense and country demeanor, Clint adjusts to an urban lifestyle, forming new relationships and encountering new adventures along the way.

Do you ever have times that you can't get enough of something? If so what is it at this moment? For me it is "Tostitos" dips. I love the "Creamy Spinach" and also the "Smooth and Cheesy". It is worth giving a try.
