Cheesecake Stuffed Strawberries

I love these little morsels of goodness. You can substitute the sugar for Splenda and they are just as good but I am staying away from all artificial sweeteners so I use real sugar.

Cheesecake Stuffed Strawberries


Ingredients:
1 quart fresh strawberries
1 TBLS sugar or 2-1/2 tsp Splenda
4 ounces cream cheese
1/2 tsp pure vanilla extract

Directions:
Clean the strawberries and cut off the tops so that they are flat. Place them on a plate.
Make a hole at the bottom of the strawberries with a small knife.
Using a mixer, blend the cream cheese with the vanilla and Splenda.
Fill a pastry bag with the mixture. Clip the end off of the bag and squeeze the hole in the strawberries full of cream cheese.
Chill until ready to serve.

WARNING: They are addictive I catch myself picking one up every time I walk by.

Friends can eat gluten-free too!

We really enjoyed our visit with Fred and Marion. Due to the cold weather we stayed in a lot but had fun all the same.

Ash and Punkin came over every morning and spent the day with us.


 
Punkin is eating now and it is so funny, she makes such a mess that Ashia strips her down to her diaper and bib. Of course she loves going without cloths so she's happy. 


  
We ate constantly. We talked about cutting back but when friends get together it is a time to celebrate and we celebrated by eating. They did not seem to mind that the meals were gluten free at all.


Steve took Fred to the MSU, Kentucky game. Fred loves basketball and we thought this would be a treat. They got in late that night and Fred seemed to have really enjoyed himself!


Marion and I stayed home and took care of Punkin and that was Marion's treat. Austin loves Marion and just laughs when she talks to her. This is Punkin playing with her Valentine from Mom.

Some neat giveaways with an Easy Cheesecake recipe.

I have read some really neat blogs lately, and this is one of my favorite!  She has tons of giveaways and they are great, plus she's just an all around neat blogger. This giveaway includes UGG boots, normally I wouldn't know what UGG boots are but I've heard my daughter talk about them a lot and from her talking I have found that they are stylish and warm. Here is a recipe that I ran across today in my collection and I haven't made it in a long time. I'm excited about making it with the Betty Crocker Yellow Cake Mix. I am awful when it comes to taking photos of the things I cook, I try to wait to post until I have a photo but I'm afraid that if I don't start posting without photos you may never get a recipe. This one is too easy and good to wait on any longer. So give it a try and tell me what you think!


Cheese Cake (Easy)

Ingredients:
1 pkg. yellow cake mix
2 TBLS oil
2 (8-oz) cream cheese
½ cup sugar
4 eggs
1 ½ cup milk
¼ cup lemon juice
2 1/2 cups cool whip
1 can cherry or blueberry pie filling

Instructions:
Reserve 1 cup dry cake mix. Combine remaining cake mix 1 egg and oil. Press evenly into bottom and 3/4 way up sides of greased pan. Mix remaining ingredients and pour into crust. Bake at 300 for 45-50 minutes. When cool add pie filling. Top with cool whip before serving.
