Another Fantastic Meatloaf

I love meatloaf but this was a first. When I first saw that people use milk and oats in their meatloaf I wasn't hip on the idea but today I felt adventurous and decided to try it. All it could do was fail and it's not like that's never happened before. It didn't fail and I will be making it again! We loved it...

Another Fantastic Meatloaf

Ingredients:

  • 3 eggs, beaten
  • ¾ cup evaporated milk
  • 1 cup oatmeal, uncooked (I used gluten free oats)
  • 3 finely chopped green onions
  • 2 garlic cloves, minced
  • 2 tablespoons parsley flakes (I use Penzey's brand)
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • ½ teaspoon oregano
  • ⅛ teaspoon black pepper
  • 2 lbs. ground beef or venison (I used venison)
  • ½ cup ketchup
  • 4 tablespoons packed brown sugar
  • 2 teaspoons dry mustard

Instructions:

  1. Preheat oven to 350 degrees.
  2. In a medium bowl combine eggs and milk; stir in oatmeal, onion, garlic, parsley, basil, oregano, salt and pepper. Add beef or venison; mix lightly
  3. I place mine on a grill pan and baked for 45 minutes. While loaf is baking, in a small bowl combine ketchup, sugar, and mustard; spread over meat after 45 minutes and bake for 15 minutes more. Let stand for 10 minutes before cutting into slices.

Low Carb, Low Sugar Meatloaf

Meatloaf is one of our comfort foods and when Honey had to go sugar free I was bummed because all of my meatloaf recipes have brown sugar in them!

I craved a good meatloaf for awhile before attempting to make one. I pulled up low carb meatloaf and used several ideas to come up with my own. Some stuff theirs with different cheeses and prosciutto but that's just not us. When I make a meatloaf I want peas and cornbread or mashed potatoes (another thing I'm not able to cook).

So here goes my new meatloaf recipe.

I forgot to take a photos, sorry I'll add one at a later date!

Low Carb, Low Sugar Meatloaf

Tomato Topping:

1 (8-ounce) can tomato sauce
1 (6-ounce) can tomato paste
1/4 cup sugar substitute (recommended: Splenda)
2 teaspoons white vinegar or water
2 tablespoons chopped fresh parsley leaves
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Add Too:

2 pounds ground chuck (may use meat loaf mix with ground pork)
2 eggs
1/4 cup cornflakes, just to help hold the shape

Preheat oven to 350 degrees. Bake for 1 hr and 15 min.
Mix the topping first and set to the side. Combine the meatloaf, eggs and cornflakes well then add on half of the tomato topping. Shape and place on grill pan and place in oven.
When your meatloaf begins to brown add the remaining tomato topping. Enjoy

My Favorite Meatloaf

Hey friends I am still cooking although nothing new lately because we have been craving the old. There's nothing wrong with that is there? Anyway here is an old recipe of mine that I have worked on every time I make it and I think it has finally reached perfection.

You will love the sweet crunchy goodness of my favorite meatloaf by far!

My Favorite Meatloaf

Ingredients:
1 pound ground beef or venison
2 eggs
1 cup corn flakes; crushed
2 Tablespoons parsley; minced
1/2 c. ketchup
1/3 c. brown sugar; packed
1 Tbs. Dijon Mustard
2 shakes of Gluten-free honey mustard B'Que sauce
1 Tbs. Worcestershire sauce
1/2 cup grated Parmesan cheese
salt and pepper to taste

Instructions:
Preheat oven to 350 degrees. Prepare last eight ingredients and set aside. Combine the rest of the ingredients with hands until evenly mixed. Work in half of the sauce mixture. Shape the meatloaf and place it on a grill pan. Pour 3/4 of the remaining sauce on top and bake for 45 minutes to an hour then add remaining sauce on meatloaf and heat until hot.

Tried and True

I have shared many time how much I love meatloaf. As I'm writing this I am thinking about making one tonight. The one thing I love is you can put whatever you are in the mood for in it and it usually turns out great. I also enjoy leftovers made into sandwiches; it's kind of like a meatball sandwich.  So a few weeks ago Honey was out of town and I decided to make a meatloaf that I had received to try from Mixes in the Heartland. I made it exactly like the package said but topped it with a sweet cranberry sauce. It was another hit, with me at least as I didn't offer any to any other person. I froze part of it and ate it for several meals.

I have also tried another ThinkThin bar and gave my husband one, he liked it so that we ordered several boxes to keep on hand.

So what are you waiting on check out these sites and make a purchase. You'll be glad you did!

Barbecue Cheeseburger Meatloaf

I love meatloaf I guess because I was raised on it. My Mom always made a traditional meatloaf but I've found since going gluten free that meatloaf can be made in several ways. I try new ones all the time. I think this makes number five in my recipe file.

Barbecue Cheeseburger Meatloaf

1 lb ground beef or venison
1/4 cup Hunts Honey Mustard barbecue sauce
1/4 cup brown sugar
2-oz cream cheese
1 cup GF cornflake crumbs

Preheat oven to 350 degrees. Mix all ingredients, shape in loaf, place in loaf pan.  Cook until brown and crunchy around sides.

I love serving a rice, vegetable medley with my meatloaf. I use brown rice, cook it in chicken broth and add mixed vegetables. Sometimes I add butter but I'm trying to stay away from that since I need to loose weight.

So don't be afraid to experiment with your meatloaf and please send your recipe to me because I love meatloaf.

Meatloaf with No Onions

I'm beginning to slow down and breathe! We've been so busy getting our new home settled and I have a lot more to do but I plan on unpacking my boxes as I can, at this point there is no rush. I'm hoping Honey will be able to meet me to shop for some more furniture I need end tables for the family room, it's hard not having anywhere to sit things. I have found, or actually Ashia did, some nice lamps at Big Lots so I'm thinking about them, that would save money and they are nice.

Last night I decided to try and make a meatloaf without onions. I always make my meatloaves with ketchup and Worcester sauce and any type of form of onion gives Honey hives. So I experimented with some basic items and it was GREAT! I had some venison on hand with bacon added to the meat. It was the perfect meat for this meatloaf, I hope when I'm out of it plain venison or beef with be good too.  I didn't think to take a photo so here is the ingredients and maybe I'll remember a photo next time.

Meatloaf with No Onions

1 lb ground beef or venison
1 small tomato sauce
3 tbls Hunts Honey Mustard barbecue sauce
1/4 cup brown sugar
1/2 to 1 cup GF bread crumbs
Top with sliced fresh tomatoes (optional)

Preheat oven to 350 degrees. Mix all ingredients, shape in loaf, place in loaf pan with tomatoes on top.  Cook until brown and crunchy around sides.

To go with this I made DeBoles Macaroni and Cheese, easy and tasty too and mixed vegetables. The meal was super good or maybe I'm just ready to start cooking in my own kitchen once again. Stay tuned as I have lots of mixes to review and meals to cook.

UPDATE ON HOME DECORATING

Here's what the house looks like so far...

One of the guest rooms.

I pray for peace to all who sleep here. I want my house to be a safe haven a place to get away from the storms of this life!

I saw these soaps years ago but at that time didn't feel I had a place to use them.  For those who know me you also know that I refuse to pay $8 for one bar of soap no matter how good it looks. Well, while A was here and we were shopping I found a box of three on clearance for $10. I was pumped and couldn't wait to get home with my purchase. They are now in one of my guest baths waiting on you to come see them. This bathroom wall is the same green as the bedroom above by the way.

The master bedroom before and after.

I love this bedding and room! it is huge after having a small one for so long so we are thinking about making a sitting room in it also. My desk takes up some of the space but there's still more to spare!

My bath Before and After.
I have not began to hang pictures etc.

Thanks for visiting, I hope to see you soon!!!
