Tried and True

I have shared many time how much I love meatloaf. As I'm writing this I am thinking about making one tonight. The one thing I love is you can put whatever you are in the mood for in it and it usually turns out great. I also enjoy leftovers made into sandwiches; it's kind of like a meatball sandwich.  So a few weeks ago Honey was out of town and I decided to make a meatloaf that I had received to try from Mixes in the Heartland. I made it exactly like the package said but topped it with a sweet cranberry sauce. It was another hit, with me at least as I didn't offer any to any other person. I froze part of it and ate it for several meals.

I have also tried another ThinkThin bar and gave my husband one, he liked it so that we ordered several boxes to keep on hand.

It is so good, I ate it by itself in a bowl the first night and the next night I ate it wrapped in a warm corn tortilla. YUM

Mixes from the Heartland Gluten Free Corn Bread Review

I had been busy running around town trying to get errands run before the stormy weather moved in.  I stopped at the grocery story and picked up a small honey ham and a cabbage for supper. On the way home I started thinking about my meal and I started craving corn bread. My gluten free corn bread is the best, it is very southern with very little sugar.

After I got home and began to cook supper I was going through the pantry to find the ingredients for my corn bread and I noticed my Mixes from the Heartland goody box. I thought, "I think I have a corn bread mix in there." So I started digging and I DID! So I used the mix but I only used two eggs and a large dip of mayonnaise.

If you like slightly sweet what I call Yankee corn bread you would love this bread.

Mixes from the Heartland Sweet Potato Brownies Review

Oh MY let me tell you! YOU DON'T want to MISS THIS!

Recently we had been out of town and a few hours after we got home we were to go out to eat with some friends. We have been trying to get together with this couple for over a year ya'll. Bet, you're glad we're only blogger friends! ha  Since I had been gone I was really stressed about the house not being clean but told Honey let's invite them over for dessert and coffee after our meal. Now, I'm already stressed about the condition of the house so the last thing I need to to be stressed over a dessert. I went to my gluten free pantry to see what I could whip up real fast that would be really good and I chose a "Gluten Free Sweet Potato Brownie Mix". Honey asked did I really want to try this, something we had never tried before, on our friends who had never been in our home and I thought about it and decided to dive in. I did a little tidying up and then put the Sweet potato brownies on to bake while I jumped in the shower.

Our meal was great at the restaurant we met at although I did get glutened! :( The minute I saw that it was buffet and saw the way it was laid out I knew I was in trouble, but our friends had already paid for us to eat so I ate a little but before I left the restaurant I felt the effects.

Anyway, when we got to the house we took the tour, Lord don't let them see all this dust, and then I offered them a brownie and coffee. Everyone said yes they wanted one and I said, they're gluten free, I guess that way if they turned out bad it was the lack of gluten's fault and not mine.

OH MY WORD these things were great! I could have eaten the whole thing, it made a 9x9 pan and we ate very little I put them in an airtight container and I can't wait until I can justify it and have another one or two or three. They were a little creamy but had a great texture and held together wonderfully. They reminded me of a cross between a sweet potato pie, which I love, and sweet potato bread. All I can say is this is defiantly another winner from Mixes from the Heartland
So here's a little more info:

Sweet Potato Brownies are fat, cholesterol, and sodium free. A delicious treat spread with cream cheese!

Mixes from the Heartland Italian Bean Soup review

Mixes From The Heartland

As I've written lately I'm having a few health issues. EARLY Monday morning Honey and I drove from the farm to the flat land (2-hours) for me to have a couple of test done at the local hospital. I thought that I could nap during the test since it would take a total of two hours but I was wrong. It seemed that the minute I laid down and got comfortable I was wide awake. So needless to say when it was time for me to cook supper I was worn out plus my blood pressure was still falling from the test. It is finally cool here so I decided to make a pot of soup. I was soooo thankful when I remembered that I still had a few mixes to try from Mixes of the Heartland.

I chose to make the Italian Bean Soup and it was wonderful. I changed up the recipe by adding only 10 oz. of crushed tomatoes and deer sausage instead of Italian sausage.  SOOO easy just what I needed on this busy, tiring, stressful day.

Don't be afraid to change up any of these mixes, they work great no matter what you make! I promise!!!

Mixes from the Heartland’s Gluten Free Harvest Chicken and Rice Soup Review

Fall is in the air and it’s time to get our ingredients together for homemade soup. Or maybe you’re in a hurry or sick as was my case and need a quick meal something simply homemade. I have been battling a head cold and just feeling awful. I told Honey that some homemade soup sure would be good and then I thought about the mixes I had won had several soups included in them so I went to the pantry and decided that we would have MFTH “Chicken and Rice Soup”.  This was so easy that even though I was coughing, sneezing, stopped up with a headache I could pull it off. I simply had to cook 1 lb of chicken and put the ingredients together and then let simmer for a while. I also substituted chicken broth for part of the water as the package suggested. Honey was not sick but he enjoyed  it along with me. We had more than we could eat so I froze a few individual servings to have on a cold blustery day for lunch.

Mixes from the Heartland Spring Muffins Mix Review

I've so enjoyed my time with family and friends! We had a small lunch together at the house and then the girls spent the afternoon shopping in downtown Greenwood and the men drove around and visited the farm. At the end of our time we ate supper at The Crystal Grill, where everyone indulged and enjoyed every bite.

I baked the men an Old Fashion Apple Pie, recipe taken from Deep South Dish. It was so rewarding to be able to make Apple Pie for my company with apples from my own trees.

I also made Spring Muffins for me and anyone else who might have been interested. These muffins are wonderful! The mixture of zucchini, carrots and cranberries are a perfect combination. Beside loving the taste you feel that you are eating a little healthier also.

Ingredients

Brown and white rice flour (organic), sugar, (Non GMO) corn starch, tapioca flour, xanthan gum, non aluminum baking powder, baking soda, cinnamon, sea salt, dehydrated carrots and zucchini, freeze dried cranberries, natural vanilla powder (Non GMO corn starch, vanilla beans).

Directions

Preheat oven to 350°. Add 3 eggs, 3/4 cup vegetable oil, and 1/4 cup water. Mix well. Slowly add dry mix, folding until moist. Fill greased muffin tins 2/3 full. Bake 15-20 minutes until center is done.

Mixes from the Heartland Cream of Celery Soup Review

My giveaway has ended (Lisa T. you still need to contact me) I have finished unpacking my kitchen and I am beginning to cook once more! I have this problem though, lately when I plan a meal and think I have an item in my freezer or pantry I get home to find that I do not have it and I remember that's something I bought for the camp house. Ugg, I guess I'll catch on or find a way to be better organized in the future.

Last night I came in after an appointment with the furniture company and went to the freezer to take out some chicken, WRONG AGAIN! The only chicken I had on hand were these hug breast and I didn't have time to thaw them. I thought that maybe I would cook Honey some hamburger helper since he loves it and never gets it but then I was thinking what am I going to eat? I decided to use some potatoes I had on hand, a pound of ground chuck and some soup mixes to make a hamburger/potato casserole. I had never tried this before but coupled with some of my famous baked beans it was great.

The hidden ingredient would be "Mixes From The Heartland's" Cream of Celery soup mix. I just sprinkled it combined with GF cream of chicken soup mix over each layer of meat and potatoes. Then I added a little more salt and 1/2 cup of water over the top.

It turned out wonderful we ate every bite. I'm so excited I have plenty more of the soup mix to use in different ways like this!

Click below and see what all Mixes from the Heartland has to offer! I've tried three of their mixes so far and we have loved everyone of them. Each mix makes at least six servings and are not only good but good for you! Just add a couple of ingredients and wha la you have a complete, easy quick meal. Keep some on hand and you'll never have to feel guilty again for serving a package mix to your family. Hey, even my Dad who is a no casserole, no mix kind of guy likes them!

Before I moved away I talked A into cutting my hair one more time. I love it, it's so easy and cool too! Thanks A!

We were on the farm last week helping out while BG had a meeting in Jackson. I spent a lot of time with Punkin, here I gave her a bath and put her rob on. Of course A had to retie it, they didn't have these things when she was a baby. Punkin is going to be walking anytime now, she tries so hard.

I've ordered a new piece of furniture that should be delivered any minute now. Maybe next time I can share it with you.

So for now that'll have to do ya! Have a good week and thanks for stopping by!

GF Tuna Casserole Meal Review

Ok, I tried my first mix from "Mixes from the Heartland" and I loved it. Seriously, I must have cooked it just right because it was this wonderful, creamy, delicious, goodness of noodles, vegetables, tuna and spices. I don't think I could have made it this perfect from scratch. And did I mention that it was super easy? I had been out shopping and was hot and tired, it was so good to have a full meal that took only adding a very few ingredients and supper was done! Honey who doesn't have to eat gluten-free loved it too and said that I have his permission to order more. Before I place my order, which could be quit large, I'm going to try some of the other mixes. By the way I think next time I"ll crush some potato chips up and put on top. What do you think?

Mixes From The Heartland

I am beginning to fill up my pantry and I'm so happy that it includes Mixes from the Heartland! Thank you Teri you are making my moving so much easier!
