Mixes from the Heartland Taco Rice Skillet Meal

Honey was at the farm working and I was to have several days alone. What could I cook that would be simple and fast so that I could eat on it several days. I dipped into my Mixes from the Heartland stash and decided that I could make their Taco Rice Skillet Meal and I'm so glad I did.

It is so good, I ate it by itself in a bowl the first night and the next night I ate it wrapped in a warm corn tortilla. YUM
