Daddy's Birthday Coconut Cake

My dad loves Coconut Cake and as much as I bake I could never find a coconut cake recipe (that I was willing to make) that he bragged on.  For his birthday which happened to be the day before Easter I tried this recipe and was told it was the best one I have ever made. From now on this is my go to Coconut Cake recipe!

 Daddy's Coconut Cake

Ingredients:

Cake

• 1 box White cake mix
• 8 oz sour cream
• ¼ c Vegetable oil
• 3 eggs
• 1 8 ½ oz can Cream of Coconut

Frosting

• 8 oz cream cheese
• 2 T milk
• 16 oz. Powdered Sugar
• 1 tsp Vanilla
• 2 bags Fresh Frozen Coconut

Instructions:

Cake

1. Heat oven to 350°F
2. Use 2 9” pans that have been greased and floured.
3. Bake approximately 30 minutes at 350°F.
4. Cool completely.

Frosting

1. Mix all ingredients in a mixer except fresh coconut.
2. Frost cake.
3. Press coconut into sides and top of cake.
4. Refrigerate

Note: You can make a few days ahead of time and freeze. Take it out to thaw at least 4 hours before you are ready to serve. You can also double recipe for a three layer cake.

Enter Alice in Wonderland

Since finding out Ashia is expecting I have been spending a lot of time there helping her out when she is sick or has a doctors appointment. Last week I went and watched Punkin for her to go to the dentist and then I spent the night with them so that I could go take care of some business in Columbus the next morning.

I'm leaving tomorrow to go spend the day with them and pick up Honey. I hope this doesn't happen again.

I was blessed in being able to attend Punkin's second birthday celebration last weekend. Ash does such a great job putting these things together, I really think she should be a party planner. I'm sure she researches to get ideas but the decorations were done totally by her. ENJOY (individual photos in album at bottom of my blog)

Happy Birthday Honey

Honey's birthday is today but we celebrated yesterday. Well if you call it a celebration, it was a celebration to us.

I had a training meeting at the museum all morning yesterday plus other things going on and didn't get home until late in the afternoon. I had some meat out so that I could cook supper and then I thought about I have another meeting tonight so we wouldn't get to do anything for Honey's birthday. My wheels went to spinning and I started trying to think about something quick I could do just to let him know that I care and this is what I came up with.

Who says dessert has to be fancy, after all it's the thought that counts!

I hope he's as happy as he seems, time will tell.

Happy birthday Honey, you deserve so much more maybe later.

Oh My, She's Twenty Seven?

We recently had a busy but fun weekend.

Punkin came to visit again.

She took my slippers off and ran with them. Since she rain in the direction of the garbage can I just knew that's where I would find them. The kitchen window? Not what I was expecting...

We took care of Punkin some so that her Dad and Mom could make trips from Starkvegas to the Hills. This child loves her Baby Einstein movies it's amazing to me that a 16-month old will sit in front of a tv like this.

We had friends from Florida visit who are more like family to us. While living in Guatemala God sent this couple to be my parents and Ash's grand-parents. We always look forward to being able to get together and catch up with them.  I was thinking today it had been a little over a year since we had seen them.

Punkin had to show Mama Marion her jewelry box.

On January 31st 27 years ago I was blessed with a beautiful baby girl and she remains a blessing to me today also. I am thankful for the times that we share, as I write this I am getting ready to go to her house.

Punkin didn't understand what was happening she wouldn't help sing, carry the cake or blow out the candle.

She did help with eating it though.

We went to a museum out to eat several times and just chilled at home. It was a fun time with family celebrating with A!

A Bittersweet Thought

The celebrating is over what a bittersweet thought. Bitter because I can't believe a year has passed so quickly but what a SWEET year it has been! We've had two big birthday parties the last two weeks to celebrate Punkin's 1st birthday! I wouldn't have missed them for anything but I am so tired; I think it's a mixture of celebrating and allergies. Honey and Ben had the worst of it they had to work all day, shower and then travel for two hours to get there late on Saturday night but I'm sure they wouldn't have missed it for the world. The first celebration was on Sunday afternoon at the farm; it was held outside in the back yard of the camp house. The second celebration was in my hometown H'ville; in the home of my cousin sister. Since my family live so far away and we are farmers we don't get to visit with them very often so it was really special to be able to celebrate Punkin's birthday and see some of our family at the same time. not to mention the great friends who attended.

 On Punkin's birthday we had fun playing but after trying for literally hours we gave up on a nap. She was so tired you can see her here carrying her blanket everywhere.

After Gage tried giving me one of his jerseys I agreed to wear it to Punkin's birthday party so that we could have a photos taken. I then slipped it back to his Mom before they left.

Punkin will be walking any day now. She takes a few steps then stops catches her balance and takes a few more after a short while she sits down and crawls, I think it's just easier.

 It's time for Gammy to say goodbye and head home. This has been a fun weekend but I need to get some work done of my own and rest before returning to the farm.

Ok, as far as my eating gluten free. I ate great before the party, I had taken my own bread so I had a hamburger with avocado. Darlenia insisted that she open new mayonnaise etc so that I could eat some with out any cross contamination. What a blessing for us when people really care! I didn't have cake but had some of the Blue Bell ice cream and a cliff bar. After looking at my bar a while and all the cake running around my bar ended up in the garbage, it was just one of those days when a bar wouldn't do. Most of the time it doesn't bother me but after having two parties and not tasting even the icing I would have paid big bucks for some of that cake. But, hey I did survive and I will survive again. I guess this is the reason I have no patience with people on a special diet who eat what they want regardless of what damage might be done.

Now I am home washing, shopping and packing to return to the farm with Honey and help out there once again.
